Everyone Under One Roof at Château les Carrasses
Carina and Stefan kept 75 guests on one Languedoc wine estate for two days: a greenhouse ceremony, rooftop cocktails and dinner facing the vineyards.

Carina and Stefan met through friends in San Francisco, built a life together in New York for about four years, and have since moved back to California. When they planned their wedding in France, one thing mattered most: everyone staying together.
They chose Château les Carrasses so that all their friends and family could live on the property for the entire weekend. "No shuttles, no scattered hotels, just everyone we love under one roof in the south of France." All 75 guests stayed at the 19th-century vineyard wedding venue in the Languedoc, and the celebration moved across the estate over two days.
The welcome party was a Mediterranean-style barbecue on the grounds, with a DJ spinning vinyl. The next day Carina and Stefan married in front of the glass greenhouse at around 6pm, went up to the château roof for cocktails at the start of golden hour, and sat down to dinner overlooking the vineyards as the sun set. Wine came from the estate's own winery all weekend.
The palette was white and cream with blush, dusty rose, powder blue and garden green. Hydrangeas spilled from urns at the ceremony, crystal chandeliers hung above dinner and low flowers ran down the tables. Carina changed shoes with each phase of the day, and Stefan swapped a black tuxedo for the ceremony for a white one at dinner.
Matching Pyjamas, a Robe Cape and a Gown by KYHA

Carina got ready in a robe cape over a Kat the Label slip, with white Chanel Mary Jane flats. Her bridesmaids wore matching pyjamas by Piyama, and Triplow Beauty did her hair and makeup: "myself, just elevated", with her hair down for the wedding.
For the ceremony she wore the Evans gown and a lace-trimmed veil, both by KYHA, with light blue René Caovilla heels. The shoes changed with the day, ending in silver Jimmy Choos for the afterparty.
Stefan's look changed too. He wore two custom tuxedos by Enzo, black for the ceremony and white for dinner and the afterparty, with Tom Ford shoes and an Audemars Piguet watch.

A Short, Personal Ceremony in Front of the Glass Greenhouse

The ceremony began at around 6pm in soft evening light, on the lawn in front of the glass greenhouse. Big, loose arrangements of white, blue and blush hydrangeas filled terracotta urns on white pedestals flanking the greenhouse doors, with smaller clusters lining the aisle.
Across the wedding, the flowers mixed hydrangea with dusty-rose garden roses, white and peach ranunculus, white dahlias, delphinium and pale pink anthuriums. Carina's bouquet pulled it all together: white ranunculus and dahlias, a peach ranunculus at the centre, blue delphinium and blush anthuriums. Ranunculus is her favourite flower, and she asked the florist to include it in her bouquet.
The ceremony was short and personal, written "to sound like us rather than tradition", and it made people laugh as much as cry.

Dinner Under Chandeliers and a Champagne Tower

The day before, the welcome party was a Mediterranean-style barbecue on the grounds, with a DJ spinning from a vinyl bar where guests could pull records and pick what he played next. Carina wore a draped red gown by Alejandra Alonso Rojas with gold heels, a pearl clutch by Cult Gaia and heirloom jewellery, and her hair in an updo. Stefan wore a linen Canali suit with a matching red pocket square.
On the wedding day, cocktail hour was on the château roof, overlooking the vineyards as golden hour began. Canapés were passed round: mini croque monsieur, beef tataki, duck breast and fish tartare. Octopus was cooked at a live station, and the cocktails were named after the couple's pets, Bailey and Nilla.
The Kingsmen, a roaming band, played through cocktail hour and dinner, and their saxophonist led Carina and Stefan into the reception.
Dinner was outside, overlooking the vineyards, at long white tables beneath crystal chandeliers hung from green arches. The menu ran from crisp langoustine with basil pesto to scallop carpaccio with sea urchin and Pyrenean caviar, then matured Aubrac sirloin with gribiche and truffle jus, and black lemon cream with verbena.
The sun didn't set until 9pm, in the middle of dinner, and candlelight and the chandeliers took over from there. Instead of a cake, a champagne tower closed dinner and launched the afterparty, which ended with an instant ramen bar as a midnight snack.
Hydrangea, Escort Cards in the Flowers and a Red Welcome Party

Carina and Stefan wanted the wedding to feel like "a French garden party someone had been throwing at this estate for a hundred years": romantic, "a little overgrown", and not overly styled. That meant masses of hydrangea, urns, chandeliers, candlelight and long dinners.
At dinner, low flowers ran the length of the tables, and the escort cards were tucked right into the flowers on a separate display. There were lots of candles once the sun went down.
The welcome party had its own colour. They chose red lilies to match Carina's red dress, and Stefan's pocket square matched too.

Why They Chose a Wine Estate That Sleeps Every Guest

Château les Carrasses is a restored 19th-century wine estate in the Hérault, about 35 minutes by car from Béziers, surrounded by vineyards. It is hired exclusively for weddings of up to 90 guests and has 30 residences on site. It is one of the wedding venues in Occitanie we feature, and with its own winery it sits among our vineyard wedding venues in France.
Carina and Stefan used the whole property across two days: the grounds for the welcome party, the lawn in front of the glass greenhouse for the ceremony, the château roof for cocktail hour, and long candlelit tables under chandeliers for dinner.
